It's peak barbecue season, and although we love spending hours brining and marinating and chopping to create the perfect barbecue spread, sometimes we just want to whack something on the grill and return to a gorgeously charred, effortless lunch or dinner – especially when we've got the World Cup and Wimbledon to keep an eye on. Here are our favourite ideas for dishes that deliver on flavour but require very little time in the kitchen, from spiced lamb cutlets to rosemary potatoes, and a clever way with halloumi that will please meat-eaters and vegetarians alike. Calçots Credit: Laura Edwards Calçots are like giant spring onions and their season is celebrated in Catalonia with great parties called calçotadas. The traditional method is to put them on top of an open fire until the first layers are really burnt – they will then cook in their juices. Or you can cook them on a barbecue, grill or a heavy-based pan. If you’re using a grill, cook them with the flame. You can take the same approach with normal spring onions. SERVES Four to six INGREDIENTS 12 calçots, or spring onions Olive oil, for coating For the romesco sauce 4 ñora peppers (available from brindisa.com), soaked in boiling water for one hour 50g blanched almonds 50g hazelnuts 1 large fresh tomato, peeled 2 garlic cloves 1 slice sourdough 1 tbsp sherry vinegar 2 piquillo peppers, drained 75-100ml extra virgin olive oil METHOD Blitz all the ingredients for the romesco sauce together in a blender until you have a chunky sauce. Clean the calçots and rub them all over with olive oil. Light a charcoal barbecue and add some kindling to get it nice and hot and full of flames, or heat a heavy-based pan or griddle pan over as high a heat as you can. Sear the calçots all over until browned and tender. Serve with the romesco sauce. Recipe from Catalonia by José Pizarro (Hardie Grant, £25) Marinated chicken with charred limes and saffron butter Credit: Mowie Kay Persians normally use a concentrated bottled citrus juice for this, which is seriously sherbety. Use this or a regular bottled sort – or if you can find a use for zest, use around 12-15 large limes. SERVES Four INGREDIENTS 1 chicken, each cut into 10 pieces, skin on Large pinch of saffron strands 1 tbsp boiling water 100g butter 1 garlic clove, crushed For the marinade Large pinch of saffron strands 1 tbsp boiling water 250ml lime juice (or sour orange or lemon) 1 onion, coarsely grated For the cucumber and yogurt sauce 200ml yogurt Handful of mint leaves, finely chopped ½ cucumber, peeled, halved lengthways, deseeded, grated and drained Pinch of sugar To serve 4 limes, halved flatbreads Flat-leaf parsley, chopped Strips of pickled onion METHOD Put the chicken in a refrigerator-friendly receptacle. Season with salt and pepper. Using a pestle and mortar, grind the saffron for the marinade with a pinch of salt and mix with the boiling water. Add to the citrus juice and pour the lot over the chicken, along with the onion. Refrigerate and marinate overnight. The next day, either get your barbecue ready or heat your oven to its highest temperature. Grind and soak the saffron in the boiling water, as before, and put it in a saucepan with the butter and garlic. Melt together. Drain and pat dry the chicken pieces then either arrange over your barbecue or a baking tray. Baste with some of the butter and cook for 10 minutes. Baste again, cook for a further 10 minutes, then repeat. By this time the chicken should be cooked through and nicely browned and blistered. Reheat any remaining butter. Put the limes on the barbecue or on a griddle pan for a couple of minutes. Mix the yogurt with the mint and grated cucumber, and season with salt and a pinch of sugar. To serve, warm through the flatbreads. Serve the chicken torn from the bone and piled into flatbreads with the yogurt, any leftover basting butter, parsley, pickled onions and squeezes of the charred limes. Recipe from Citrus by Catherine Phipps (Quadrille, £20) Grilled halloumi burger with smashed avocado Credit: David Loftus Every good pitmaster needs a solid veggie burger in their arsenal. This recipe is super-simple, quick to make and packed with flavour. SERVES Four INGREDIENTS For the seasoning 1 tsp sumac Pinch of cayenne pepper 1 tsp paprika For the smashed avocado 2 ripe avocados Juice of 1 lime For the burgers 4 x halloumi slices, 2cm thick Olive oil, for drizzling 4 burger buns (I like using brioche or demi-brioche) Handful of mint leaves, chopped Pomegranate molasses, to drizzle 2 ripe tomatoes (preferably beef), sliced Bunch of rocket METHOD Set up your barbecue with the coals in an even circular pile right in the middle. Put all the seasoning spices in a bowl and mix well. Halve the avocados, remove the stones and, using a large spoon, pull the ripe flesh away from the skin and into a bowl. Using the back of a large spoon, smash the avocado to a chunky paste. Pour in the lime juice, give it a light mix and set aside. Lay the halloumi slabs on a plate and drizzle olive oil on both sides. Lightly sprinkle the seasoning mix all over the cheese. Place the slabs over direct heat and grill for a couple of minutes on one side until you have some lovely golden grill marks. Flip and repeat. Everything happens pretty quickly, so this is a good time to toast your burger buns on the grill. Spoon the avocado on to the four bun bases. Sprinkle over the chopped mint, then place the halloumi steaks on top. Next, drizzle the pomegranate molasses on to the halloumi. Top that with the tomato and rocket. Recipe from Fire Food: The Ultimate BBQ Cookbook by DJ BBQ (Quadrille, £15) Smoked grilled prawns with lemon butter sauce Credit: Jason Ingram These prawns have a wonderful flavour, thanks to a handful of wood chips thrown on to the embers of the fire just before you cook. Smoking chips are such a simple way to add smoky intrigue to all sorts of grilled foods – just make sure you soak them in cold water for an hour before adding them to the fire. SERVES Four as a starter, or two as an indulgent meal INGREDIENTS 600g raw king prawns 1 tbsp olive oil 75g butter Zest and juice of 1 lemon 1 clove of garlic, crushed METHOD You need a good bed of glowing embers over which to set your grill. First, score through the shell of each prawn along the back. To do this, take a prawn and rest it on a chopping board with the back facing towards your cutting hand. Press down on to the prawn with the other hand to hold it steady while you make an incision with a sharp knife down the shell, from the head to the tail. Repeat with the rest of the prawns, putting them into a bowl as you go. Once they are all scored, drizzle in the olive oil and toss to coat. Season with salt and pepper. To make the sauce, put the butter, lemon zest and juice and garlic into a small heatproof dish. Season with salt and pepper. When you are ready to cook, use a metal peel to pull the embers into a low bed in the centre of the fire. Scatter the damp wood chips over the embers and set your grill over them to heat up for five minutes. Once the grill is hot, tip the prepared prawns on to it, spreading them out in a single layer. Rest it back over the embers and grill for 10 minutes, turning the prawns over with tongs halfway through cooking. If your grill is on the small side, you may need to cook the prawns in two batches. When the prawns are cooking, warm the sauce to melt. Once the prawns are cooked, tip them into a dish and spoon over the sauce, tossing well to coat. Tuck in while they are hot. Recipe from The Ultimate Wood Fired Oven Cookbook by Genevieve Taylor (Quadrille, £15) Barbecued potatoes with rosemary oil SERVES Four INGREDIENTS 5 large waxy potatoes 2 sprigs rosemary 120ml olive oil METHOD Scrub the potatoes with a brush under lukewarm running water to remove the dirt. Dry and cut them into thick slices. Lay the potato slices on a preheated hot barbecue rack. Cook them for 20 minutes, turning them from time to time so they don’t burn. Chop the rosemary and mix with the olive oil. Once the barbecued potatoes are cooked, place them in a large serving dish, season with salt and pepper and drizzle with the rosemary oil. Serve hot with skewers or a barbecued rib steak. Recipe from Beef & Potatoes by Jean-Francois Mallet (Murdoch Books, £20) Marinated lamb cutlets These Moorish spiced lamb cutlets are to die for. You can use any meat to prepare this dish, such as pork chops or chicken drumsticks. The key is in the marinade. If you are planning a barbecue, don’t overlook this recipe. SERVES Four as a main or eight as a tapas INGREDIENTS 12 lamb cutlets (French ribbed chops) 2 garlic cloves, finely chopped 10 sprigs fresh thyme, leaves removed 200ml olive oil 1 tbsp honey 2 tsp ground cumin 2 tsp dried oregano 1 tsp sweet or hot pimentón (sweet or hot smoked paprika) Pinch of salt Freshly ground black pepper METHOD Place all the ingredients except the meat in a large mixing bowl. Whisk until combined, then pour the marinade over the lamb cutlets, making sure they are well coated. Marinate for at least one hour or up to two days in the fridge. Remove any excess oil from the meat and cook them over charcoal on the barbecue, or under the grill for 10 minutes. Recipe from Spanish Made Simple by Omar Allibhoy (Quadrille, £20) Koftas with spices, coriander and rocket SERVES Six to eight INGREDIENTS 2 handfuls of coriander 600g minced beef 1 tbsp ground cumin 1 tbsp curry powder 2 baguettes To serve 100g rocket, to serve 2 tbsp olive oil METHOD If using wooden skewers, soak them in water until ready to use. Wash the coriander and chop the leaves coarsely. Put the minced meat in a large bowl. Season with salt and pepper and add the coriander, cumin and curry powder. Add a little water and knead. Divide the meat between the skewers, pressing it on so it remains in place. Put on a plate and cover with plastic wrap. Rest the koftas for 30 minutes in the refrigerator. Preheat the barbecue or grill to high. Cook the koftas for six to eight minutes, until cooked through. Cut the baguettes into pieces. Dress the rocket with the olive oil. Pull the skewers out of the koftas and fill the bread with the meat and rocket. US officials have asked for more time to reunite migrant families separated at the Mexican border because some parents have already been deported. The government had been given a deadline by a Californian judge to produce a list of children under the age of five separated from their families at the border. But in a two-hour hearing on Friday, a government attorney said that 19 parents of children under the age of five held in custody had left the US. The Justice Department has a deadline to release the children by July 10 but argued it needs more time to perform the necessary identity checks. More than 2,300 children, around 100 of them under five, were separated from their families as a consequence of the Trump administration's "zero tolerance" policy that saw their parents prosecuted for illegally crossing the border, even if they did so to seek asylum. Activists across the US protested against the separation of migrant families Credit: AFP Several hundred have already been reunited with their parents after the controversial policy was revoked, but officials say the process is time-consuming. This week the government revealed it is using DNA tests to determine parentage and has ordered tests on around 3,000 children. The Department of Health and Human Services defended the decision from critics, saying "it is critical to ensure that children are returned to their parents, not to potential traffickers". Authorities also needed to determine whether the adults had a criminal history or could present a danger to their children, the department said. During the court hearing it also emerged that 16 children are yet to be matched to their parents; 19 parents have already been released into the US; 46 parents are being held in custody by Immigration and Customs Enforcement and two parents have been judged unfit for release. The judge, Dana Sabraw, has yet to rule on the extension but has ordered the government to provide a full list of those under five held in custody by Saturday afternoon.

Thai rescuers pulled 21 bodies from waters off the coast of the holiday island of Phuket on Friday after a tourist boat went down in heavy seas with dozens of Chinese passengers on board. The dead were found drifting face down in the water, still wearing life jackets, several miles from where the Phoenix sank after being hit by five-metre (15-foot) high waves in a storm on Thursday evening. Divers reported seeing "over 10 bodies" floating inside the hull of the submerged boat, according to Thai navy Rear Admiral Charoenphon Khumrasee, who said they would try to retrieve them later Friday. One survivor, a Chinese woman, was rushed to hospital in Phuket, according to a reporter at the scene, after she was found several miles from the boat, floating near the bodies of fellow passengers. Her condition was unknown. The boat was carrying 105 passengers, mostly Chinese tourists, when it sank. Some 48 people - passengers and crew - were rescued and one body found before the operation was suspended overnight. Stunned survivors huddled in blankets on a Phuket pier late on Thursday. Some cried while others appeared dazed as they walked around still wearing their life vests. The Phoenix was among several boats that appeared to have ignored a warning in place since Wednesday not to take tourists on day-trips to the islands that dot the seas off Phuket. Several other vessels hit trouble late on Thursday, but all of their passengers were rescued. The phenomenon of "flying" spiders gliding into the air and traveling like balloons for hundreds of miles (kilometers) has a new possible explanation: the air's natural electric charge. Aerial spider journeys -- often known as "ballooning" -- have long been observed, notably by biologist Charles Darwin, who documented the spectacle in his diary in the 19th century. One closely studied hypothesis suggested that spiders weave very fine silk threads that catch in the wind and whisk them aloft, sometimes over great distances at high altitudes.

A series of explosions triggered inside buildings housing black market fireworks workshops have killed twenty-four people and injured at least 49 in Mexico. Four buildings were destroyed by the blasts in the town of Tulepec, 20 miles from Mexico City. The government of the state of Mexico said in a statement that eight people from Tultepec were killed, along with the six emergency personnel and two others who have not yet been identified.
